Wealth
Wealth is in the heart and the mind, not the pocket. I may not be a wealthy man, but I am very wealthy in that respect. This place is captivating, compelling, truly special. It gives you wealth.

We are masters of our craft. Not in the sense that we have mastered our craft, but that we are mastering our craft. We are actively working on ourselves, the menu, our techniques, the ingredients, and every aspect of our daily lives. Perhaps it is only a 1% improvement, perhaps it is 5%. But, every day, without fail, we strive to make the day better, more efficient, smoother, better(ton) for our guests. Wealth is in the heart and the mind, not the pocket.
We do not live lavishly. But we do have certain creature comforts that make our days more joyous, putting us in the right headspace and mindset to be creative, to see the ingredients in a different light and put our best foot forward.
Good butter on toast. A well brewed cup of coffee. Sparkling spring water.
Simple pleasures. Delightful pleasures.
I must thank my (soon to be, 30 days and counting!) wife for giving me the perspective on life that allows me to come to work every day without thinking I’m working. She gives me so much joy and warmth, and my cup runneth over. The surplus of happiness benefits the food and beverage as I work with fervor to give the best service to our lovely menu.

Random musings and rumination:
Just imagine how advanced all of our societies would be if, instead, we shared knowledge, culinary or otherwise. Food has, intentionally and inadvertently been shared from culture to culture. Conquerers, conquistadors, people traveling the lands could have stemmed the tide of violence and pillaging, chosen to share love of food and the knowledge that comes with it. Fermentation, dumplings, pasta, cheese, preservation, and countless other items and techniques are seen in every corner of the globe. The game of telephone gives slight alterations in the items and techniques, as certain ingredients are utilized of their region, giving birth to a new thing altogether.
The advancement of cuisine has closely followed the advancement of society, art, science, beauty.
The Fall season fucking rocks.
Bread is really, really delicious.
Isn’t it funny that restaurants are relatively unnecessary, yet continue to operate? I understand that we all need sustenance to survive, but not like this. Food prepared with love is a gorgeous expression of the human spirit. And we are living in the golden age of it.
